Makes 6 small or 4 regular size

INGREDIENTS

Panna cotta

  • 1 can full fat coconut milk (400mls)

  • 1 tsp vanilla

  • 1/4 cup white sugar (I never usually use this sugar but I wanted the traditional white look)

  • 3/4 tsp agar powder – you can buy this at health food stores

Berry topping

  • 1 cup frozen mixed berries

  • 1 tbsp maple syrup

  • 1/2 tsp vanilla

  • pinch of salt

METHOD

  1. Pour all panna cotta ingredients into a saucepan, simmer on low for 5-6 minutes and continuously stir with a spoon, then pour into moulds
  2. Allow to cool
  3. Put them in the fridge for a couple of hours to set
  4. For the berry topping – put all berry ingredients into a saucepan and simmer until the berries have defrosted and softened, then cool in the fridge
  5. Carefully remove the panna cotta from the moulds, serve with berries and enjoy!
