Serves four

This is a really simple delicious curry, you can use whatever veg you like, I love sweet potato as it thickens and sweetens the curry adding loads of fibre without being too starchy

  • 1 tblspn of ghee or coconut oil
  • 1 large onion
  • 2 garlic cloves
  • 2 tsp of grated fresh ginger
  • 1 bay leaf
  • 3 tps ground coriander
  • 3 tsp ground cumin
  • 1tsp turmeric
  • 1 can tomato
  • Salt pinch
  • 2 cups water or stock of your choice
  • 2 medium sized carrots
  • Handful of green beans or medium sized broccoli
  • 1lge sweet potato
  • 1 medium sized cauliflour

Heat ghee and fry onion for a few minutes on a low heat so as not to burn,  add garlic, ginger  and spices then stir over heat for a few mins.

Mix in tomatoes salt and seasoning

Simmer for a few minutes then add the water or stock

Chop all veg into bite size chunks. Add the sweet potato and carrots then cook till almost tender then add green veg and cook for a further few minutes

Check seasoning before serving, add some herbamare or salt and pepper if needed.

Serve with basmati rice and coconut dahl.

Make a coconut creamed based curry instead. Omit the tomatoes and use a can of coconut cream instead. Make sure to buy the ones with coconut cream only in them…no hidden nasties.
